I love the process of creating  a painting - choosing a scene, forming the composition, mixing the colors, applying the paint to the canvas, making adjustments along the way, and viewing the final piece.  You never know exactly how well it will turn out, but that's part of the challenge.  It's a thoroughly engrossing, fun experience.
